Strawberry Almond Salad

I could eat salad or soup every day of the week and never tire.  It's because I make salads out of everything - fruit, veggies, herbs, meat, leftovers - so it never gets boring. I'm always checking restaurant menu's for unique and different fresh ingredient combinations. To not forget, I shoot a photo of the listing of ingredients from the menu and throw it all together first chance I get.

This recipe includes the fresh smell and sweetness of just picked strawberries, the crunch and texture from thinly sliced almonds, fresh mixed greens, thinly sliced red onion and chunks of feta on top.  I was doing some fall clean up in the garden today and found these little gems peeking through the leaves in the Everbearing Strawberry bed. So, create an amazing new salad today!

(Serves 4- 10 minutes prep)

What you need:

  • Large bowl of fresh mixed greens

  • 1/2 cup fresh strawberries

  • 1/4 cup thinly sliced almonds

  • 1/4 cup very thinly sliced red onion

  • 1/2 cup feta

  • 1/4 cup extra virgin olive oil

  • 1/8 cup drizzle of a balsamic vinegar -my favorite Fig Balsamic Vinegar made by Cosimano e Ferrari Olive Oil Company

How to make it:

Combine all ingredients in bowl, serve immediately and enjoy!
