Peaches & Wine (Pesce & Vino)

(i.e. The absolute easiest recipe you will ever make!)

A Little Background:

In Italy this refreshing dessert is known as Pesce & Vino. I first fell in love with this little gem last summer while visiting my cousin Novelia at her beautiful mountain home in Abruzzo.  Novelia shared the three secrets - ripe peaches - good dry red wine &   24 hours in the fridge. You follow those tips and you've got an amazing dessert - elegant enough for a dinner party with a little fresh whipped cream, or just for a light treat out on the deck in the sun. 


What You Need:                                                              No Cooking Required

  • 5-6 ripe peaches

  • 1 bottle of dry red wine (wine you would drink) - My top picks would be Montepulciano or Pinot Noir

How to Make It:

Thinly slice 5-6 ripe peaches and place them in a medium size bowl and add as much wine as you need to cover your peaches.  Chill covered for as long as you can resist eating them. Serves 4
